Lentil Carrot Soup with Fire Roasted Tomatoes and Parmigiano-Reggiano Essence

Ahh, warm delicious soup. Nothing like it to warm you up on a cold day. Not to mention how healthy it is for you. You might be thinking healthy, but does how does it taste? Okay, not only is this recipe healthy, it’s packed with tons of flavor. For a different twist on this classic soup recipe, I use fire roasted tomatoes and add Parmigiano-Reggiano cheese rinds.
