One of the most delicious Provençal traditional sauce is aioli. Similar to mayonnaise, this creamy sauce is made with egg yolks, garlic, fresh lemon juice and olive oil creating an emulsion. I love how versatile aioli is because you can add other flavor goodies to this recipe to create different versions. Like swapping out the tarragon and adding chipotle peppers for another crazy good twist.

It’s so flavorful and amazingly different from the jar variety! With only a few ingredients (that most of us have in our pantry), you can make a batch using your food process or blender.
